Ingredients:
- 1/2 cup quinoa
- 1 cup water
- 2 tsp. salt
- 1 can black beans
- 1/2 cup corn
- 1 cup cherry tomatoes (halved) (you can use Rapunzel, Orange Zinger, Terenzo or Fantastico)
- 1/3 cup parsley
- 1/3 cup basil

Preparation
Bring quinoa and water to a boil, cover and turn down to a simmer for 15 mins. Combine remaining ingredients in a bowl. Add salt to cooked quinoa and add to salad. Chill 1 hour. Serve cold.
